Palace Foods Inc. is proud to announce our own, Devi Jagadesan, as a feature field expert in the article, “Why Americans call foreign foods by the wrong names”, published in the Quartz Digital Journal. The article, released on January 22, speaks to the common misguidance associated with cultural cuisine in American culture. Devi shared her perspective with author, Brianna Holt, regarding the differences between North and South Indian Cuisine, as well as the ways their gourmet Indian cuisine brand, Sambar Kitchen, has had to assimilate in order to sell in the American market.
What it’s All About
We are a society that prides ourselves on inclusion and diversity, coining the melting pot metaphor back in the 1780’s. However, cultural assimilation has come in many forms since our early American history. Between ancestors changing names and english being the predominant spoken language, our melted population has become a bit muddled by our primarily European descendants.
Devi eloquently shared the differences between North and South Indian cuisine, as well as the challenges Sambar Kitchen has faced in labeling their products properly versus making sales on shelves. Since Rajavel Jagadesan founded Palace Foods Inc. in 1988, these waters have taken time and patience to learn how to navigate in a way that balances profitability with authenticity.
As Holt points out in her article, “In order to pull Western customers in, many international food brands have been faced with a situation in which they must make their authentic food… less authentic.”
